Vegan Sushi

Ingredients:

  • 2 cups sushi or quick grain white rice

  • 2 1/four cups chilly water

  • 5 tablespoons rice vinegar

  • 2 tablespoons raw sugar

  • 1/2 of teaspoon spellbinding sea salt

  • 6 sheets nori

  • 1/four cup mayonnaise (vegan if crucial)

  • 1 ripe avocado, sliced

  • 1 dinky cucumber, sliced

  • 2 tablespoons toasted sesame seeds

  • pickled ginger, wasabI, and gluten-free soy sauce, to abet

Vegan Gyoza

Ingredients

  • 1 pacakge firm tofu frozen, thawed, washed

  • 1/2 cup quinoa

  • 200 grams cabbage (7 ounces)

  • 4 scallions minced

  • 2 large cloves garlic grated

  • 1 inch knob ginger (about 1 tablespoon)

  • 2 tablespoons sesame oil

  • 1 tablespoons soy sauce

  • 1 tablespoon sake

  • 1 tablespoon potato starch

  • 1 teaspoon salt

  • 1/4 teaspoon white pepper

  • 2 dried shiitake mushrooms

  • 40 gyoza wrappers (a.k.a. potsticker wrappers)

  • vegetable for frying

  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • chili oil (optional)

Vegan Pancakes

Ingredients

  1. 1 1/4 cups whole wheat flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 1/4 cups unsweetened plain soy milk
    1 tablespoon maple syrup, plus more for serving (optional)
    1/2 teaspoon vanilla
    Cooking spray
    Fresh fruit for serving (optional)
    Jam for serving (optional)
    Soy yogurt for serving (optional)

Vegan Alfredo

Ingredients

  • 8-10 ounces gluten-free pasta (linguini, spaghetti, or fusilli)

  • 3 Tbsp olive or avocado oil

  • 4 large cloves garlic (minced)

  • 4 Tbsp arrowroot powder (or sub all-purpose flour if not GF)

  • 1 3/4 - 2 cups unsweetened plain almond milk

  • ~1/2 tsp each salt and pepper (to taste)

  • 4-6 Tbsp nutritional yeast

  • 1/2 tsp garlic powder

  • 1/4 cup vegan parmesan cheese (plus more for topping)
